I’ve recently converted to Catholicism from the Episcopal Church where we were taught to “stand to sing; sit to listen and kneel to pray.”  It does not seem appropriate to me to stand to pray, sit to sing…is it standard or local to a parish?

It’s mostly standard-the only time it’s not is right after Communion is received.

Why are the statues and crucifix covered in the Catholic Churches during Lent?
